Description
Picual olives from Jaén, picked green in the last week of October and milled within four hours. Early harvest means less oil per tree and far more of what you came for.
Cut grass, green tomato, a peppery catch at the back of the throat — that is the polyphenols, and it fades through the year. Use it raw.
